2021年11月28日 食器はバナナの葉?

これもフィリピンでの話。現地事務所の方々が出張者を食事に招待してくれた。現地流を堪能する気遣いからか、フィリピン料理を現地流の食べ方で楽しめるレストランだった。 その名もカマヤン。カマイは現地語で手を表す。そう、その名の通り手で食べるのだ。
料理はリッチョンと呼ぶ豚の丸焼きとラプラプと言う魚を焼いたもので、ライスも含めて手で食べる。そして、それらを盛り付ける食器がバナナの葉である。 手で食べると言うより、少量のライスの上に豚肉や魚を乗せてつまむ様にして口まで運ぶ。丁度、自分で寿司を握ってそのまま食べるような感じ。 視覚、嗅覚と味覚に加えて触覚も食事の一部となる。フォークや箸で食べるより遥かに美味しい。

This is also a story in the Philippines. Local office staff invited business travelers to eat. It was a restaurant where you can enjoy Filipino cuisine in a local way, probably because they were concerned about enjoying the local style. The restaurant name was Kamayan. Kamay expresses the hand in the local language. Yes, as the name implies, eat by hand.
The dishes were roasted pork called Ritchon and roasted fish called Lapu Lapu, which are eaten by hand, including rice. And the tableware that serves them was banana leaves. Rather than eating it by hand, put pork or fish on a small amount of rice and pinch it to your mouth. It's just like making sushi yourself and eating it as it is.
