2021年11月12日 「麻拉」四川料理の奥深さ
中国の都市訪問回数で考えると、深圳、上海、成都、北京、南京の順だろう。全て大都市なのだが、深圳、上海、北京は中国々内のあらゆる料理が入り込んでいる。
ただ、成都では「郫县(ピーシェン)」を拠点としていたためか、ほぼ、四川料理に限られた。ご想像に難くないであろうが、どの料理も辛く、辛さの程度が異なるのみであった。
因みに、郫县は豆板醤で有名な地だ。
元々辛い料理は好きで何ら問題はないのだが、辛さの中のコクとか辛さの後に来る甘み、酸味とか、奥の深さを実感した日々であった。成都滞在中は麻拉三昧であったが今では懐かしい。
ご心配いただく諸兄に申し上げるが、お通じに異常はなかった。

Considering the number of city visits in China, Shenzhen, Shanghai, Chengdu, Beijing, and Nanjing would be in that order.
All are big cities, but Shenzhen, Shanghai and Beijing are filled with all kinds of food from China.
However, in Chengdu, it was mostly limited to Sichuan cuisine, probably because it was based in Pixian.
As you can imagine, all the dishes were spicy and only had different degrees of spiciness.
By the way, Pixian is famous for Doubanjiang.
Originally I liked spicy food and there was no problem, but I realized the richness in the spiciness,
the sweetness that comes after the spiciness, the acidity, and the depth. I was crazy about Mala during my in Chengdu,
but now I feel nostalgic for those days. I tell those who worries that there was no abnormality in the buttocks.
