2021年11月10日 食材にタブーはない、ここは中国

中国は食材の宝庫。蛙、鳩、蛇、兎、どれも肉質が淡白で美味だが食べ難いものもある。鳩は食べると言うより肉を吸い出す。初体験はマレーシア・ クアラルンプールで中国系オーストラリア人の友人は限られた時期に楽しめる特別な料理と言っていた。
食べ難いのは上海蟹も同じ。初体験は上海だが殻をバリバリと食べてだけのような記憶。小ぶりの渡り蟹の親戚みたいで本当に上海蟹だったのか、 未だに確信が持てない。何せここは中国だから。近年は成長促進剤や抗生物質を与えているものが多く、安全で美味い上海蟹の入手は中国にいても難しいらしい。 いつか本当に美味しい上海蟹を食べる機会があるだろうか、その時まで味の感想は保留としておく。

There is no taboo in the food ingredients, it is China here China is a treasure trove of food ingredients. Frogs, pigeons, snakes, and rabbits are all pale and delicious, but some are difficult to eat. Pigeons suck meat rather than eat it. My first experience was in Kuala Lumpur, Malaysia, and a Chinese-Australian friend said it was a special dish that I could enjoy for a limited time.
The same is true for Shanghai crab, which is difficult to eat. My first experience was in Shanghai, but I remember eating the shells crunchy. I'm still not sure if it was a true Shanghai crab because it looks like a relative of a small mitten crab. After all, this is China. In recent years, many have been given growth promoters and antibiotics, and it seems difficult to obtain safe and delicious Shanghai crab even in China. I wonder if there will be a chance to eat really delicious Shanghai crab someday, and I will put my impression of the taste on hold until then.
